Skipjack on fire

What is special in Kochi, a prefecture in Shikoku island? – Skipjack (bonito), of course. (by the way, I didn’t know that this fish has cute Spanish name! Do you know where is the origin of it? Let me know!) They burn the surface of fresh bonito with rice straw, and they do it by order!
